Frugal Pancakes
Pancakes are a great cheap, easy and versatile dish. Can be a breakfast, Brunch or Dessert.
The great thing about this recipe is once you make a basic batter mix, you can add whatever filling or topping you want or have leftover.
Ingredients:
100g plain flour
250ml milk
1 egg
pinch of salt
Sieve the flour into a mixing bowl and add salt, add the egg and gradually add the milk stirring all the time. If it is too thick simply add a drop of milk to loosen it up.
Heat a flat bottomed frying pan with a little oil, when oil is hot and begins to smoke add enough mixture to thinly cover the bottom of the pan.
Once the bottom is golden brown flip the pancake either by using a spatula. Once the other side is golden your pancake is finished.
You can add whatever topping or filling you wish, a few good suggestions are:
Lemon juice and Sugar
Sliced Banana
Any leftover fruit (may need to add sugar if bitter)
Its great to experiment with different toppings, you can make these topping as cheap or as expensive as you wish
